Potato and Green Bean Salad

Potato and Green Bean Salad

This is a really delicious and healthy side dish. It’s also really easy and really quick to make. The hardest part of this recipe is waiting for it! LOL. I actually made it twice today.  This recipe calls for a really good olive oil because you’ll add the dressing to the potatoes while they’re hot and the flavor of the oil will really stand out.  One person who ate this tasted a hint of garlic though there’s no garlic in this recipe; it was the flavor of the olive oil.

 

Ingredients:
1.5 – 2 LBs new potatoes (I used red and Yukon Gold)
3-4 handfuls of green beans
1/2 red onion, sliced in half moons
3/4 cup of olive oil
1/4 cup white wine vinegar
Salt, pepper to taste

Steps:
1. Clean and boil potatoes. In the last few minutes of cooking, add green beans to the potatoes (no need to dirty another dish). Scoop out the green beans and dunk them into cold water (I used a spider spoon).

2. Make the dressing by mixing oil, vinegar, salt and pepper.  I just measured it out in a measuring cup and added to a jar with a lid and shook it a bit till it emulsified.

3. Combine potatoes, green beans, onion, and dressing.  Toss gently and serve while warm.  Enjoy!
